Zucchini chocolate cake!! Growing up, we always had a huge garden with an overabundance of veggies. My mom insisted on planting too many zucchini plants. My dad hates zucchini. Mom made this cake (chocolate being dad's favorite) without telling him it had zucchini in it. He loved it...til mom told him what was in it. He refused to eat anymore!
We also had deep fried zucchini. Dip in onion ring batter and deep fry.
Or fried zucchini. Dip in egg, roll in flour, salt and pepper, and fry in butter.

I love zucchini. I can't wait until I have some from the garden. I stir-fry zucchini, make zucchini frittata, stuffed zucchini, vegi-pasta soup with zucchini and of course eat it raw.

This is a recipe for Zucchini slice{probably similar to Jan's frittata}
375 grams of zucchini
3-4 rashers of bacon,diced.
1 large onion,chopped.
1 cup grated cheese
1 cup self-raising flour
1/2 cup oil{canola or sunflower}
5 eggs,lightly beaten
salt and pepper
Grate unpeeled zucchini coarsely,combine with remaining ingredients,and bake in well greased swiss roll tin,375degrees for 30-40 mins until well browned.
