Cake icing recipe wanted:)

Does anyone have any recipe for cake icing. Thanks in advance for any help.

Everbody's gotta have a cream cheese icing recipe. This one is delicious!!

1/2 cup (1 stick) butter, softened
4 ounces cream cheese, softened
1 tsp vanilla extract
2 1/2 cups confectioner's sugar

To prepare, beat together butter and cream cheese at medium speed until completely smooth. Beat in vanilla. Beat in confectioner's sugar until well blended. YUM!

Browned Butter Icing
1/4 cup butter, heated in pan until brown and frothy (do not burn)
2 1/2 cups icing sugar
3 Tablespoons of cream

Beat until smooth, adding a little more cream if necessary. This is great on chocolate cake.

I developed this recipie from a butter cream candy filling. I made cakes proffessionally for awhile and everyone would DEVOUR the icing!
It's easy to remember because everything is in an increment of 1.

For a small cake or cupcakes....

1 box powdered sugar
1 stick unsalted butter
1 8oz brick of cream cheese (not reduced fat)
1 tsp salt
1 tsp vanilla

Very easy to double the recipie for a larger cake.

If you want a slightly stiffer icing in order to do piping or decorating, only put in a half brick (4 oz) of cream cheese. I also tend to be veeeerrrrry generous with my 1 tsp. of vanilla (it's closer to a Tablespoon ;-) but you can do it to your own preference.

Light Icing

One of the things I like to do when I don't want a heavy dessert is to make a lighter cake - 13x9 or bundt - and while the cake is still fairly hot from the oven, drizzle a glaze of powdered sugar and lemon or orange juice over the cake, and you're done! The warmth of the cake will help it disperse over a bundt or makes it easier to spread on the 13x9. It sets as the cake cools. How much juice you add should be judged by how thick you want the glaze and how much you like the citrus flavor. If you're crazy about citrus, you can also add some finely-grated peel to the glaze (I add zest to my cream cheese frosting - yummy!). You can also add a dash of your favorite extract to the glaze. It's super-easy and makes for a light, slightly less sweet dessert, which is really nice in the heat or if you're following up a heavy meal.
