8.8 lb Prime Rib

Hi all - just wondering what the best way to cook a prime rib is...we are having a family dinner tonight and we over cooked it last year...any tips??

yummmm! My hubby cooks a prime rib every Christmas Eve...

He sears it in a pan first and then cooks it really, really slow on the grill. That's all I know and I'm sorry not much more help!

Your best bet is to get an internal thermometer, the kind you stick into the middle and it stays in with a cord that comes out and attaches to the base unit. If you set it for the perfect internal temperature it will beep when it's done and you don't have to cook by time but by temperature. I did this with my Thanksgiving turkey and it was the best one we have ever had. You can get one for about 20-30 bucks at a kitchen supply store or department store and is well worth the money, especially with how much an 9 pound prime rib costs=) I would really recommend you use one of those when cooking it. Use a nice herb rub on the outside and it should be great!
