Question carrot cake plz?

has anyone got a nice tasty way of making this please?

I just googled this one. i might try it myself tonight or this weekend. Enjoy!!!



Carrot Cake

2 cups of sugar
2 cups of flour
2 teaspoons of baking soda
1 teaspoon of salt
3 teaspoons of cinnamon
1 1/2 cups of vegetable oil
4 eggs
3 cups of grated carrot
1 cup of chopped nuts, optional
1 teaspoon of vanilla

Sift together the sugar, flour, soda, salt and cinnamon. Stir in the oil. Add the eggs, one at a time, mixing well after each addition. Add carrots, nuts, and vanilla, mixing thoroughly. Pour into a floured and greased 13 x 9 x 2 inch cake pan. Bake in a 350ºF. oven for 30 minutes. Cool in pan. Spread with Cream Cheese Icing.

Here's the version I make. It'spretty much the same as the 1st recipe posted. My family loves it - esp. the frosting.

CARROT CAKE

2 cups sugar
1 ½ cups vegetable oil
4 eggs
2 cups flour
½ cup (or more) chopped walnuts
2 tablespoons water
2 teaspoons cinnamon
1 teaspoon salt
2 teaspoon baking soda
3 cups grated carrots

Mix sugar & oil well. Beat in eggs, water and dry ingredients, mix well. Fold in carrots & nuts. Pour into greased & floured 13x8x3” pan. Bake at 350 for about 1 hour or until cake test done with a toothpick. Cool completely.

CREAM CHEESE FROSTING
6 oz cream cheese
½ stick butter or margarine (4 tbl)
1 tsp lemon juice
2 tsp vanilla
¾ box powdered sugar

Cream cheese & butter until fluffy and add sugar & flavorings. Beat well.

Refrigerate cake after frosting.

i made it once years ago but can't remember now but i do remember adding a can of pineapple. yum.

will have a go at your ways tho' - thanx guys.
