I love meatloaf. I don't usually follow a recipe. I just make it with whatever I have on hand. I would do a search on google. I am sure you will find lots of meatloaf recipes.

so basically it's - mince, egg, & breadcrumbs then whatever you want to add yourself?
mix it & put it in a loaf tin?
cook on slow for 30-40mins?
confirmation for the rookie please.
also - what should the texture be like inside once cooked?

I ususally make it with oatmeal and will often put cream of mushroom soup on top, which is really yummy. Not exactly low cal though. I will drain off the fat half way through the cooking and then put the soup on.

I make mine with oats, bell-peppers, and a can of tomato soup mixed in.. It's yummy! I also have heard of adding dry French Onion soup, but haven't made it that way yet.
Like everyone else, I'm getting hungry for meatloaf now.

Here is a thing I like to do, after you mix all the ingredients into the hamburger, flatten the hamburger out onto a cutting board, kinda like bread, then sprinkle grated cheese over it, add some finely cut broccoli and coliflower, then roll it up and put into a bread pan and cook, then it has a nice cheese and vegitable filling. Try it, it's is good eatin'.
Also, add a splash of Worchestershire sauce into the hamburger before you cook, that good stuff.

I like theGangler's idea of rolling the meat with some goodies inside....I'll have to try that one!
Meatloaf is great with Mashed Potatoes and just about any veggie. I like corn along wtih the mashed potatoes....reminds me of when I was little and my mom made it like that (I mix the mashed potatoes and the corn together)!!!!

OK, here's a healthy meat loaf recipe...and i swear by this, it is the BEST meatloaf i've ever tasted, and i've tried a lot of recipes!!
1 can (6 ounces) no-salt-added tomato paste
1⁄2 cup dry red wine
1⁄2 cup water
1 clove garlic, minced
1⁄2 teaspoon dried basil leaves
1⁄4 teaspoon dried oregano leaves
1⁄4 teaspoon salt
16 ounces ground turkey breast
1 cup oatmeal
1⁄4 cup liquid egg substitute
1⁄2 cup shredded zucchini
Instructions
Preheat the oven to 350°F. Combine the tomato paste, wine, water, garlic, basil, oregano, and salt in a small saucepan. Bring to a boil, then reduce the heat to low. Simmer, uncovered, for 15 minutes. Set aside.
Combine the turkey, oatmeal, egg substitute, zucchini, and 1⁄2 cup of the tomato mixture in a large bowl. Mix well. Shape into a loaf and place into an ungreased 8" x 4" loaf pan. Bake for 45 minutes. Discard any drippings. Pour 1⁄2 cup of the remaining tomato mixture over the top of the loaf. Bake for an additional 15 minutes.
Place on a serving platter. Cool for 10 minutes before slicing. Serve the remaining tomato sauce on the side.

The best recipe for meatloaf is on the back of the box for Lipton Onion Soup Mix. For the ground beef...make sure to get "meatloaf mix". Most food stores sell...its a mixture of pork, beef, and veal. Very tasty. Also the recipe says to put in 2/3 ketchup...forget about the ketchup and put in barbeque sauce. It is excellent!!!! Trust me, I make it all the time!!!!
