Roasted Greek Lemon Potatoes
2 lbs of new potatoes
2 Tbsp Greek seasoning
Juice of 2 lemons
2 Tbsp olive oil
½ cup of water
pinch of sugar
Preheat oven to 400 F. Peel and cut potatoes into halves and place in a buttered casserole dish. Drizzle with the olive oil. Toss to coat. Mix lemon juice, seasoning and water and pour over potatoes. Cover and bake in oven for 20 minutes. After 20 minutes, remove the cover and continue roasting, basting frequently every 15-20 minutes until potatoes are tender when tested with a fork.
If you don't have or can't find greek seasoning mix then just use a tsp. each of oregano / basil and some salt and pepper.
