Ooops, I thought I had posted it already. Andie, our meal came out really yummy!! It was VERY filling!!

Here's a GREAT recipe!

I love this one - my mom found it and it's been a favorite ever since.

CHICKEN CONTINENTAL

5 slices of bacon, fried crisp and crumbled
1 package of dried beef, cut into small pieces
3 or 4 boneless, skinless chicken breasts
salt and pepper
1 can cream of mushroom soup
1 16 oz. container sour cream
1 medium onion sliced

Pre-heat oven to 350. In a 9 x 11 pan (I always use the cooking spray), crumble bacon and chopped dried beef on the bottom. Lay chicken breasts on top, salt and pepper to taste. In a bowl, thouroughly mix the mushroom soup and the sour cream. Top the chicken with the sliced onions, and cover with the soup/sour cream mixture. Cover with foil, and bake for 1 hour, 15 minutes or until chicken in done. Stir the sauce, and serve over rice or egg noodles. It's delicious, and can be done in a crock pot, too!

I know this is a little late but if your still looking for recipes this is a good one.


Get about 1lb of chicken breasts. There is a marinade you can buy...its in little packets and it's McCormick Zesty Herb. Follow the directions on the marinade except use Balsamic Vinegar instead of white. I do not let the chicken sit in this marinade. Defrost your chicken and make the marinade. Dip each piece of chicken in the marinade and make sure it is completely coated. Fry in a large pan until done. Pour the rest of the marinade into the pan and simmer for about 30-45 minutes. (The longer you simmer, the more tender the chicken.) Your Done!! I usually make this chicken with perogies, it makes a great, filling, unconventional meal.

Grilled Margarita Chicken Salad

Cut some boneless breast halves into bite size pieces. I use at least one per person. Then marinate in Margarita Mix for a least an hour. I like it best after 2 to 3 hrs.. Overnight is to strong for me.

Prepare your favorite salad. I like romaine lettuce with baby spinach leaves and spring mix if I can get it. Red onion, green pepper, celery, carrot, black olives, anything you like in a salad. When your salad is chilled & ready to serve, grill or stir fry your chicken. I use my George Forman. Sprinkle the chicken over your veggies and top with your favorite dressing.
