Thumbs up Busy Day Chicken Rice Casserole

This casserole is so easy to make, and it's really good. We'll be having this on a regular basis at our house.

By the way, this is my version of this recipe. The original can be found here.

Busy Day Chicken Rice Casserole

2 (10.75 ounce) cans 98% fat-free cream of mushroom soup
1 cup water
1 cup uncooked white rice
1 (8 ounce) can mushrooms, drained
1 tsp. minced garlic
Ground black pepper to taste
1 package dry onion soup mix
10 skinless, boneless chicken tenders

Preheat oven to 325 degrees F.

In a large bowl combine the mushroom soup, water, rice, mushrooms, garlic, and black pepper. Mix all together. Pour mixture into a 9x13 inch baking dish and spread on bottom.

Lay chicken pieces over soup mixture and sprinkle dry onion soup mix over all. Cover tightly with aluminum foil and bake in the preheated oven for 1 to 1 1/2 hours or until chicken is cooked through and no longer pink inside.

Preparation Time: 1 hour 45 minutes

My mom used to make this for us when we were kids .

Sounds yummy

I wonder if I can substitute milk for the 1C of water to see if it makes it a tad creamier.............

I'm sure you can. It was pretty creamy like it was, but that would probably be yummy.

I'll stick to water, though, because I'm counting WW points. Milk would increase the amount/serving.

Milk is a staple in our household. Being only Scott and I in the house we still go through three gallons of milk a week We love our milk 2% or 1% please, whole milk makes me wanna vomit
