Kedgeree
I just posted yesterday in Boxer Ring how Billy had mopped up fishy milk I spilt on the floor after Mark had made Kedgeree.
Well here's the recipe:
150g long grain rice
125ml milk
450g smoked haddock
50g butter
1 tbsp curry powder
2 hard boiled eggs roughly chopped
cayenne pepper
boil the rice until cooked. Drain rinse under cold water and drain again.
Put milk in shallow pan with 125ml water. bring to simmering point add fish and poach gently for 4 mins. Transfer haddock to wooden board. Remove skin and bones, break up the flesh.
melt butter in pan blend in curry powder and add flaked fish. Warm through. Remove from heat and stir in chopped eggs, add salt, pepper and cayenne.
Melt remaining butter in another pan, add the rice and toss until well coated. Add salt, pepper and cayenne. Add rice to haddock mixture and mix well.
gardish will parsley serve at once.
