Warm Soups
Hello everyone. I am very excited with the fact that it is getting cooler, and almsost time for soup. I was hoping you can help me out and let me know if you have any favorite soup or even chili recipes that I could try out. Thanks a lot.

This is one of my favorite soups. It is so good with a loaf of good bread. Also it freezes really well.
No-Meat Soup
½ chopped onion
2 cloves garlic
1 small zucchini (chopped)
2 16oz cans Italian stewed tomatoes
1 16oz can kidney beans (drained)
1 16oz can garbanzo beans (drained)
4 cups water
Optional/per taste:
Salt
Pepper
basil
oregano
Simmer all ingredients for about 45 minutes.
Toward end, add your favorite kind of pasta (I like orzo, but angel hair is good too.)
Enjoy!

Soups
I have just come back from England & Germany, and while in Germany when we stayed with one of Gunthers brothers, my sister-in-law made a soup full up with vegetables and some of the lightest dumplings we had ever tasted. I have the recipe and will try it out very soon now that the weather has turned a bit cooler. They are made with semolina. They were delicious. I will try them first then share the recipe with you.

That soup sounds very Yummy I am gonna make it for dinner tonight, I can't wait. I actually got this recipe from a friend and It is so good, my family want's me to make everynight. Yeah right!!!!!!
Meatball Soup
2 tbs olive oil
2 3/4C chopped onions
4 minced garlic cloves
2 Bay leaves
5 14 1/2 Oz cans of beef broth
1 28 Oz can of diced tomatoes
1/2C chunky tomato salsa
1/2C Cilantro
Meatballs
1lb lean ground beef
1/4lb pork sausage
6tbs cornmeal
1/4C milk
1 large egg
1/2tsp salt, pepper, cumin
you also need a 1/2C long grain rice but do not put it in the meatballs you add it later to the broth.
Brown the onions, garlic, and Bay leaves in the olive oil.
Add the broth, salsa, tomatoes, and cilantro, heat it to a simmer and let it simmer for 15-20 minutes.
Meanwhile mix the meatball ingrediats and form the meatballs.
Reduce heat on the soup, add meatballs and rice, and cook for about 20 minutes or so.
I have found that this soup goes well with corn tortillas. Ihope everyone enjoys.

Slow Cooker Chili
This one is so easy and my family just loves the chili.
SLOW-COOKED CHILI
2 lbs Ground beef
2 cans Kidney beans (16 oz. each)
2 cans Diced tomatoes, undrained (14 ½ oz. each)
1 can Tomato sauce (8 oz.)
2 Medium onions, chopped
1 Green pepper, chopped
2 Garlic cloves, minced
2 tbsp Chili powder
2 tsp Salt (optional)
1 tsp Pepper
Shredded Cheddar cheese (optional)
In a skillet, brown beef; drain. Transfer to a slow cooker. Add the next nine ingredients. Cover and cook on low for 8-10 hours or on high for 4 hours. Garnish individual servings with cheese if desired.

Chicken Noodle anyone?
Another family favorite, I even like this one and am not a chicken noodle soup person.
CHICKEN SOUP
1 Broiler/fryer chicken (3 to 3 ½ pounds)
3 Quarts water
¼ c Chicken bouillon granules
1 Bay leaf
1 tsp Whole peppercorns
1/8 tsp Ground allspice
4 Cloves garlic
4 c Sliced carrots
¾ c Sliced celery
½ c Chopped onions
“Homemade” or egg noodles
In a Dutch oven or a soup kettle, combine the first seven ingredients; bring to a boil. Reduce heat; cover and simmer for 1 – 1 ½ hours. Remove chicken; allow to cool. Strain broth; discard bay leaf, peppercorns and garlic. Skim fat. Debone chicken and cut into chunks; return chicken and broth to pan. Add vegetables. Simmer until vegetables are almost tender. Bring to a boil and add “homemade” or egg noodles. Cook an additional 7-9 minutes until noodles are done.
NOODLES
2 ½ c All-purpose flour, divided
1 tsp Salt
2 Eggs
1 can Evaporated milk (5 oz.)
1 tbsp Vegetable or olive oil
Set aside 1/3 cup of flour. Combine salt and remaining flour in a bowl. Beat eggs, milk and oil; stir into dry ingredients. Sprinkle kneading surface with reserved flour; knead dough until smooth. Divide into thirds. Roll out each portion to 1/8 inch thickness; cut to desired width. You may freeze extra portions at this point.

Hi Helene, have you tried the recipie? Not that you are under any pressure on anything  I made dumplings two nights ago and they turned out heavy and gluey
