Smile Potato soup YUM

I was really wanting some potato soup since this nice crisp fall weather started. However I have never made it and I could not find a decent recipe, so I borrowed a little from about 5 different recipes I found and just pulled stuff out of the cabinets. Try it out, very tasty.

1 12 oz package of bacon
1/4-1/2 C of flour
1 whole onion finely chopped
2 cans chicken broth
1 can cream of chicken
1 6-8 oz package of sour cream
1 C of milk
2 C of water
4-5 medium potatoes (small cubes)
Salt and Pepper to taste.

Chop bacon into small pieces and place in the bottom of stock pot. Brown till nice and crispy. Pull the bacon out and reserve the fat in the bottom of pot. Add onions and let them brown in bacon fat. Add flour till you have a nice rue and allow to cook for about 5 minutes(looking for a light brown, glue like texture). Add in chicken broth and stir to incorporate until you have no lumps. Add cream of chicken and sour cream. Stir to incorporate. Add milk and water. Add in Potatoes and half of the bacon. Cook on medium heat for about 20 to 30 minutes until potatoes are soft. Use potato masher or submersion blender and break up most of the potatoes. Add in the remainder of the bacon and cheese if you would like. DH is lactose intollerant so I don't use cheese. Cook for about 5-10 more minutes. Enjoy.

Makes a big pot of soup, the left-overs are marvelous, and it freezes well.

I actually use the fat free cream of chicken fat free low sodium chicken broth, fat free sour cream to offset the bacon. It is not what I would consider to be health food, but it sure does taste good.

Mmmmmm sounds nice! There's nothing nicer than a big bowl of steaming hot soup to greet you on a cold winter's night! That soup reminds me of a traditional Scottish soup that my grandma used to make me when I was a kid. It's called potato and leek soup (or tattie and leek if you want to be authentic)

One onion chopped
2 large leeks chopped
5 or 6 medium potatoes chopped
3 pints of chicken or ham stock (my gran used to use the stock left over from boiling a ham)
salt pepper
splash of milk or cream

Saute the onion in some butter or oil for 5 minutes. Add the leeks and cook for another 10 minutes. Add the potatoes and stir for a few minutes. Add enough stock to cover all the ingredients. Boil until all the potatoes are cooked through and the leeks have wilted down. Next add the milk or cream. You can now blend it with an electric food processor if you want a smooth textured soup. If not, you can leave it chunky.

That is how my grandmother always made her potato soup!! It was so good. Wish she was still here to make it. Nothing beat her cooking. She had Irish in her, so maybe that's how her mother learnt it and passed it on.
Thank you for bringing back such a sweet and fond memory of sitting in her kitchen on cold days after school and eating her soup.
I may have to make some now. I'll have to make some french bread to go with it too.

Wow it's amazing how our grandmothers' recipies are always the best. No matter how many times I make that soup I can never seem to get it to turn out like her's. Maybe it was just the memories that go along with it! I'm glad someone else has this recipe too - it's so easy but so satisfying!

I didn't thank you for the recipe. My grandma was the "old school" and never went by a recipe. She just threw things in. She made the best pancakes too. It took me about 7 years to figure it out. And like her, I just put stuff in. My brother has a few of the recipes she actually had, so I got to copy those. To this day, I can't make macaroni and cheese like her. I really miss her and those fun times. She taught my mom how to cook. Hate to say it, but mom's cooking is bad. blushicon
