Pumpkin Whoopie Pies with Cream Cheese Frosting

I make these and they are always a huge hit!

Pumpkin Whoopie Pies

2 cups packed brown sugar
1 cup vegetable oil
1 ½ cups solid pack pumpkin puree
2 eggs
3 cups all purpose flour
1 tsp salt
1 tsp baking powder
1 tsp baking soda
1 tsp vanilla extract
1 ½ TBS ground cinnamon
½ TBS ground ginger
½ TBS ground cloves

1. Preheat oven to 350°. Lightly grease baking sheets.
2. Combine the oil and brown sugar. Mix in the pumpkin and eggs, beating well. Add the flour, salt, baking powder, baking soda, vanilla, cinnamon, ginger and cloves. Mix well. Let stand 15 minutes
3. Drop by heaping teaspoons onto the prepared baking sheets (I used a large cookie scoop leveled). Bake at 350° for 14 to 18 minutes or until toothpick inserted comes out clean. Let cookies cool and then make sandwiches from two cookies filled with cream cheese filling.



Cream Cheese Filling

2 (8 ounce) packages of cream cheese, softened
½ cup butter, softened
2 ½ cups sifted confectioners sugar
1 tsp vanilla extract

1. In a medium bowl, cream together cream cheese and butter until creamy. Mix in the vanilla, then gradually stir in the confectioners’ sugar. Fill whoopie pies.

I will have to try these, I like anything with pumpkin.
