I use my crock pot a lot!
I try to make a new recipe in it every Sunday. I have a book called Fix-It and Forget-It Lightly Healthy, Low-Fat Recipes for Your Slow Cooker by Phyllis Pellman Good. It's got a lot of great recipes in it!

Wow a new recipe every Sunday!

My crock pots mostly get used for soups and roasts. I made split pea with ham today. Last weekend it was regular chili in one crock pot and white chili in another. Other recent dishes were 5 bean soup and a pot roast.

Have you ever glazed a ham in the crock pot or fixed a turkey breast in it? Those are good. I haven't done this for years, but I used to fix chicken divan in the crock pot.

My favourite is a roast pork with one cup of salsa and one cup of bbq sauce. Yummy! Don't forget to to add the potatoes too!

My favorite is a beef roast! Put a beef roast in the crock pot and season. Add quartered peeled potatoes, carrots, celery and onion. Add water so crock is 1/4 full. Cook all day. Serve with crusty french bread. The leftovers are cut into chunks, add peas and served the next night as beef stew.

Cubed Steak: flour and brown beef cube steak. Place in crock. Combine 1 can cream of golden mushroom and 1 can of water. Pour over steak. Add cracked pepper over the top and cook on low all day. Serve with egg noodles or mashed potatoes.

Italian beef: place beef roast in crock. Combine 1 package dry onion soup mix and a cup of water. Pour over beef. Also add 1 can diced tomatoes. Cook over night on high. In the morning, shred beef. Add beef back to crock with liquid remaining. Cook on low for a couple more hours. Serve on buns with swiss or mozzarella cheese!

My fave:

Crock-pot-sagna

Ingredients:
1 lb. curly short-cut pasta (campanelle by Barilla works good) cooked to al dente.
2 tbsp. olive oil (to coat bottom of crock pot)
1 lb. ground italian sausage or chorizo, browned * see below
1 med. onion, chopped
4 garlic cloves, minced
1/2 tsp. pepper
1/2 tsp. allspice
1 jar of your favorite spaghetti sauce (or homemade if you prefer)
1 14.5 oz. can crushed tomatoes
1 can tomato sauce
2 C. Water
1 1/2 C part-skim Ricotta cheese
1/2 C grated parmesan cheese
2 C Mozzarella
1/4 C chopped parsley (fresh)

Mix: Ricotta, 1 c. mozzarella, parmesan, and parsley together. refrigerate until used.

*In a large skillet, brown sausage with chopped onions and garlic. Season with pepper to taste. Drain thoroughly.
Add spaghetti sauce, tomato sauce, diced tomatoes, allspice and water. Simmer 10-15 minutes.

In 5-6 quart crockpot drizzled with olive oil, pour 1 C. of the sauce/meat mixture. Then top with a layer of noodles. Top with more ground beef sauce, then a layer of the cheese mixture. Repeat layers to fill crockpot 3/4 full. Top with remaining Mozzarella cheese.

Cover crockpot and cook on low for 6-7 hours - DO NOT STIR.

YUM!

And a couple more easy tasty ones!

Cheesy potato casserole in the crock pot!

2 lb. pkg. frozen hash brown potatoes (partially thawed)
2 cans (10 oz. each) cheddar cheese soup
1 (13 oz.) can evaporated milk
1 can French fried onion rings
Salt and pepper
*another option: add ham or browned chorizo if you prefer.

Combine above ingredient and pour into greased crockpot and salt and pepper.

Cover and cook on low for 8 to 9 hours or high for 4 hours.

top with remaining french fried onion rings.

------------------------
Crock pot Meatloaf

1/2 cup milk
2 white bread slices
1 1/2 pounds lean ground beef
2 eggs
1 small onion, minced
1 1/2 teaspoons salt
1/2 teaspoon pepper
1 teaspoon dry mustard
12 ounces whole tomatoes

Place the milk and the bread in a large mixing bowl, and let stand until the bread has adsorbed all the milk. With two forks, break the bread into crumbs.

Beat the ground beef into the crumbs until well mixed. Make a hollow in the center of the meat and break the eggs into it.

Beat the eggs a little; then grate the onions into the eggs. Add salt, pepper and mustard. Beat the eggs into the beef. Shape into a round cake and place in the slow cooker. Drain the tomatoes, and place them on the meat.

Cover and cook on Low for 5 to 7 hours. Before serving, uncover the pot; turn the heat to High, and bubble away some of the sauce. It should be thick, not thin.

---------------------------

Crock-pot Broccoli soup

4 cups water
4 chicken bouillon cubes
1/4 cup chopped onion
2 cups diced potatoes
1 bag frozen, chopped broccoli
2 cans cream of chicken soup
1/2 to 1 lb. Velveeta cheese, cubed

Mix water, bouillon cubes, onions, potatoes and broccoli in a crock pot. Cook on high until broccoli is thawed. Add cream of chicken soup and cheese, to taste, to mixture. Turn crock pot on low and cook for 2 hours.

Some of my favorites:
Crockpot Italian Beef:
3-4 lb roast (any)
2 pkgs powder italian dressing mix
1 16oz jar of mild pepper rings w/ juice
1 8oz jar of mild giardiniera - drained

I put it all in the crockpot and cook on low for 8 hours. Shred beef and serve.

Mexican Chicken
5-6 boneless skinless chicken breast
1 8oz bar cream cheese
1 8oz jar of salsa - I usually use medium, but if you don't like spicy go with mild
1 can of black beans -drained and rinsed
1 can corn

I put all of it in the crockpot and cook on low for 8 hours, shred chicken and serve with rice or tortillias.
