Salmon Oscar

My son just brought home a 25 pound salmon, so I've been trying every salmon recipe I can think of. This dish was particularly good, recreated by memory and guesswork from a dinner at Tom Ham's Lighthouse in San Diego.

SALMON OSCAR

Ingredients:
Salmon fillets or steaks, preferably mesquite marinaded, but fresh is good also, 1 good sized piece per person

2-3 stalks asparagus per serving, parboiled or steamed until just barely tender

crabmeat, either real or imitation, shredded, 1/4-1/2 cup per serving

1 package Bernaise or Hollandaise sauce, prepared according to instructions, enough for up to ~8 servings

Instructions:
Broil or grill salmon until done, but still tender and juicy

Top each piece of salmon with a clump of crab, 2-3 stalks of asparagus arranged nicely over the crab, and a spoonful of rich sauce over the top of it all. Place under broiler long enough to warm toppings. It's SOOOO good, even with fake crab!

All of you salmon lovers should ask the Alaskan members of this board how to cook it. I had the best salmon I ever had when I was in Valdez, Alaska last summer and some good smoked salmon in Homer, Alaska. It was served in the restaurants every way imaginable. The smoked I had was done in a backyard smokehouse out on a ranch!
