Wink This is the best chocolate cake recipe I have ever tried!!

I got this out of a magazine, and it was so delicious, I had to share it. It wasn't hard at all to make, just took some time. I only have a small hand-held mixer, so I ended up mixing some by hand. Here it is:

Chocolate Buttermilk Cake

Prep - 45 minutes plus cooling
Bake - about 30 minutes
Makes - 16 servings


2 cups all-purpose flour
1 cup unsweetened cocoa
1 ½ teaspoons baking soda
¾ teaspoon salt
1 ½ cup buttermilk
2 teaspoons vanilla extract
1 ¾ cups granulated sugar
¾ cup butter or margarine
(1 ½ sticks), softened
3 large eggs


1. Preheat oven to 350 F. Grease two 9-ince round cake pans. Line bottoms of pans with waxed paper. Grease waxed paper; dust with cocoa, shaking out excess.

2. On sheet of waxed paper, combine flour, cocoa, baking soda, and salt. In 2-cup liquid measuring up, mix buttermilk and vanilla; set aside.

3. In large bowl, with mixer on low speed, beat sugar and butter until blended. Increase speed to high; beat 3 minutes or until creamy, occasionally scraping bowl with rubber spatula. Reduce speed to low; add eggs, 1 at a time, beating well after each addition.

4. Beat in flour mixture alternately with buttermilk mixture just until blended, beginning and ending with flour mixture, scraping bowl occasionally.

5. Pour batter into prepared pans. Bake 30 to 35 minutes or until toothpick inserted in center of cake comes out clean. Cool in pans on wire racks 10 minutes. Invert cakes onto racks to cool completely. Carefully remove and discard waxed paper.

6. Prepare frosting.

7. Assemble cake: Place 1 cake layer, rounded side down, on cake plate. With narrow metal spatula, spread 2/3 cup frosting over layer. Top with second layer, rounded side up. Spread remaining frosting over side and top of cake.

Vanilla Cream Cheese Frosting

½ cup butter (1 stick), softened
(no substitutions)
1 package (8 ounces) cream cheese, softened
2 teaspoons vanilla extract
1 package (16 ounces) confectioners’ sugar

In large bowl, with mixer at medium high speed, beat butter, cream cheese, and vanilla 2 minutes or until light and fluffy. Reduce speed to low. Beat in confectioners’ sugar until blended. Increase speed to medium-high, beat 2 minutes or until light and fluffy.

I made it after I posted this, and it only took me about an hour, most of that bake-time. I may never buy a cake again!!
