You could try going with a completely raw foods diet. There are quite a few people on the big Barf list who have dogs with colitis and have had great success feeding raw. I'm sure they will be very helpful. Details of this list are here:

As far as veggies go, raw are best, dark green leafy veggies, carrots etc which have been very finely processed in a food processor or juiced. A good rule of thumb is to feed your dog veggies a rabbit would eat. There are some pics of processed veggies here:
