Food dehydrator tips?

Grumpy loves dehydrated sweet potato chews... buying them from the store is expensive, so I bought a dehydrator and tried to make them myself. But mine are not coming out right at all... seems like they are either soggy or crispy, never "chewy". Anyone else use a dehydrator and have any tips?

I don't have one but I am looking for one. I know someone who dries chicken, fish, lamb for her dogs. I asked her and was told that to dry any meat you need about 6-8 hours.
