Question How do you react?

What do you do when your dog barks at you coz you are telling them NO for something & when they bite & chew on you very hard?

Mine has started doing this & I don't think she's being very nice.

If I try to make a stand & front her it only makes matters worse - the only thing that calms her is when i send her to her crate for a time-out, but I feel like I should be able to control her without a crate.

So what do you do if you have a problem like this??

Redirection and time outs are both things I do. (in time out he throws a temper tantrum!). As for when he gets too excited and jumps and bites and growls in play (I think this is what you're describing). I walk into him (I don't lift me knee) just walk towards him and firmly say down and then make him sit and stay before I will pet and play with him again. That seems to be working right now pretty well. I agree with Mandi that time outs work, but I don't always think he understands why he's in timeout...

Time-out & toy redirection really works & I do this most of the time, but I want her to do as she's told without these tools, & without the back-chat.
